I mentioned in my recipe, special conchiglioni, the sun-dried tomatoes packed in 'oil.
They are prepared in the fall to keep then in winter.
Someone puts pepper, basil, anchovies, chilli.
My mum prepares them simply with garlic, parsley and capers
Ingredients
dried tomatoes
olive oil
parsley
capers
33, 8 fl. oz (1l) vinegar
glass containers
garlic
Wash the tomatoes with vinegar one at a time.
Then begin to fill the jars, thoroughly clean and dry, with sun-dried tomatoes.
To each layer add a few cloves of garlic, parsley and half a teaspoon of capers.
When the jars are filled, cover with oil until the edges and close the jars with their coverage.
Every time we take the tomatoes, we make sure we always fill the jars with more oil.
